Kale and Sausage Frittata

Simple Dinner.  Local eggs, onions, kale, garlic, milk, and sausage from Costco.  Ah well.

Cook some chopped onion and garlic in olive oil.  Add your favorite sausage (we use these from Costco. . .yum).  Add chopped fresh kale and cook until kale is wilted and tender.  Add 6 eggs mixed with grated cheese (we used a mixture of jack and parm. . it’s what we had) and a splash of milk.  Let cook until the bottom starts to solidify.  While the eggs are cooking, warm up your broiler.

When the bottom seems firm, add a little extra cheese on top and stick under the broiler until the eggs are cooked, the cheese is melted and the top is a little browned and yummy.  Serve with salad and eat.
