Bacon Asparagus Salad (my own creation)
On individual plates, layer:
Salad greens
1/2 pound steamed asparagus (or to taste, we had a lot about to go bad, so we each ate 1/2 pound. . .1/4 pound would be just fine too)
3 slices bacon per person, cooked
sprinkling of cashews
dressing (recipe below)
Lemon Balsamic dressing
2 T lemon juice
1 T balsamic vinegar
1-2 t honey
Bacon grease from cooking the bacon, or 2 T olive oil
Salt and Pepper to taste
Mix it up in a jar and serve on the salad.
