Foodie Friday: Summer Squash, again!

I’m super intrigued by the Zucchini Egg Foo Yung over at A Foothill Home Companion.  Zucchini, eggs, onion, flour, salt and pepper and BAM, you’ve got dinner, or a snack, or breakfast.

And, long time friend and farm member, Kim, recommended we give Moosewood Restaurant’s Peruvian Quinoa Stew a try.

I’m in.

    if you are ooking for yummy zucchini recipes this time of year, as anyone with a csa would, check out epicurious spiced zucchini bread. you need to cut the sugar and oil almost in half and i like to use garam masala in place of the allspice, but it is great…and you can freeze it for later use. btw the smock is adorable…much easier than one of my dad’s old shirts on backwards.

      That recipe looks amazing Mel. And, holy crow. . really? Garam Masala in the bread? That sounds amazing. I’ll have to check it out. ~C
