Foodie Friday: More Green Stuff

The Baccus family called me to be sure to share this Zucchini Crust Pizza recipe.  Thanks for the idea!
Zucchini Crust Pizza Recipe

adapted From the Moosewood Cookbook.
  • 4  cups grated zucchini
  • 3 eggs
  • 1/3 cup flour
  • 1 cup shredded cheese (a mix of mozzarella, Parmesan or Romano would be yummy).
  • 1 tablespoon fresh herbs, chopped (basil, oregano, even some rosemary would be good here).
  1. Salt the zucchini lightly and let it sit for 15 minutes. Squeeze out the excess moisture.
  2. Preheat oven to 350.
  3. Combine all ingredients and spread into an oiled 9″ pie plate or a 9×13″ pan
  4. Bake 20-25 minutes, or until surface is dry and firm.
  5. Brush top with olive oil and broil under moderate heat for 5 minutes.
  6. Top with favorite pizza toppings
  7. Put back in the 350 oven and bake until done. . . about 20-25 min.

This salad looks so yummy, I might go get dried cranberries right now so I can make it tonight!

    this is one of my favorite recipes from moosewood. i have made this a few times with basic toppings to bring as an appetizer to pot lucks. good finger food.
