Foodie Friday: Beets!

Abby and I checked out a fabulous kid’s book from the library that is all about soup!  Delicious, a Pumpkin Soup Story includes a recipe for “Pink Soup”.  This may be the only way I will get Abby to eat beets this season!  She’s convinced that “Pink Soup” will be the BEST thing ever.  We’ll try it.  I’ll report back!

So, what else can you do with beets?  Well, bake them, roast them, grate them into a salad, pickle them, steam them.  Make pancakes out of them.  Make beet chocolate cake (yum!). Make Borscht.  Hmmm. . . seems endless huh!

    Risotto! Julienned, cooked beets (steam, roast, grill, whatever) with arborio, onions, stock & parmesan — cook risotto as usual. I usually cheat and use canned shoestring beets, so I don’t know for a fact that they need to be pre-cooked. I also make risotto with uncooked, shredded butternut squash, so maybe uncooked shredded beets would do just fine. (you can also “risotto-ize” pearl barley in place of the arborio)

    Beet dip! Beet dip! Mmmmm. I’m also a fan of just grating them raw over a salad. Just a sprinkle–pretty AND tasty.

    We are most definitely going to check that book out–although I’m kind of surprised we’ve not seen it before, what with the giant duck on the cover. Usually Eva zeroes in on any book duck related. Thanks for the heads up!

      Oh Shannon, Apparently that book is part of a series. . . so, there’s several duck and friends books. Cool! ~C

    Hey I forgot to tell you that Abby tasted Aunt Joni’s borscht. Good for her but not a fan. Pink Soup, good for you. Love MOM

    My kids eat beets. First we told them that they turned their pee pink, so that right there was the selling point. But then their dad would roast them or sautee them and use some concoction involving vanilla extract. They always ask for seconds and thirds!!
