Foodie Friday: Daikon!

Wow, I totally missed the boat last week when I gave beet recipes and there were NO BEETS in the share!  Ha!  I’m pretty sure we’ll have daikon this week though.  Daikon is a Japanese radish.  It’s white, long and tapers at one end. . . not to be confused with a parsnip (those really look more like a white carrot).  Since we haven’t actually had daikon yet this season, I haven’t had a chance to do a trial with these recipes.  I have been dying to try making Banh Mi (a Vietnamese sandwich on a baguette!) ever since my cousin made one earlier this week with this vegetarian recipe.  I’ve got two chicken Banh Mi recipes in mind to work from:  number one number two.

    sorry, I’m way late commenting on this. But the remainder of my daikon (which was only half used up with the bahn mi sammies) went into some simple miso soup. which is also a real fav of mine this time of year. easy. simple. satisfying. :)
