Foodie Friday: Winter Squash
Carnival Winter Squash and local Plums in my kitchen.
So, I have a Carnival winter squash on my counter “curing,” and if you happen to be a member of my CSA, you do too! And, you might have one around even if you’re NOT a member of my CSA. You can use any winter squash here. The point though, is that it’s time to chop it up and make soup! I, of course, suggest you use beans you made from scratch and any “last of the season” tomatoes you have around instead of the canned stuff, but honestly, there are days that a quick “throw it all in a pot” meal is called for. You will likely have more than 1.5 cups of winter squash when you chop up your Carnival squash, so double up the recipe to accommodate that amount of squash or bake the extra, mash it up and stick it in your freezer for later use in muffins or something else super yummy. You can add chopped greens at the end of this for some extra vitamins and minerals. Serve this with some salad and crusty bread. Voila. . . dinner!
