Foodie Friday: Celeriac

Celeriac is also known as celery root, so don’t be thrown off if you see recipes using either name. It’s the kind of muddy looking ugly thing in your farm share that tastes like a dream. Parsnips are the albino carrot-y looking veggies. Celeriac and parsnips are both fabulous roasted. There was a great story about celeriac on NPR a few years ago with even more recipes. Check it out here.  I’m gearing up for our last week of farm goodness next week.  I’m always so sad when the season ends.

    that looks like one of those things in Harry Potter..oh yeah..a mandrake. Fortunately Kari wrestled mine into a nice creamy soup. yum!
