I thought folks might be curious how a family of three uses up a Greens-Heavy farm share in a week.
I’ve kept notes for you all week. You’re welcome.
Here’s what was in last week’s share:
Friday:: Picked up the veggies! Rinsed the salad, tore up the bigger pieces more and spun it all in our salad spinner. Made a giant salad with grated carrot (would have added radish, but we get the half share), red bell pepper and grape tomatoes from Country Aire and ate it with our pizza. Saturday:: Rinsed and used spinach in green smoothies. Ate more salad with dinner.
Sunday:: Again with the salad.
Monday:: Even more salad for lunch. Also: used lettuce leaves to wrap up tuna salad for a snack. Dinner was stir fry with leeks from 2 weeks ago, bok choi, chard, other veggies from the grocery store and pork.
Tuesday:: We eat tacos on most Tuesdays and use salad greens in ours a lot. Another favorite is the Greens Tacos recipe you can find on the blog.
Wednesday:: Salad for lunch. Lettuce leaves as wraps for Asian Lettuce Wraps (recipe below).
Thursday:: Brinner for Dinner at our house. We made green smoothies with the end of the spinach and are pretty much out of our share!
